2 onions, quartered
32 oz packages mushrooms
1 head purple cabbage sliced
10 carrots carrots sliced into ¼ inch coins
2 heads celery sliced 1 inch pieces
2 inch piece of ginger diced
4 cloves of garlic diced
4 tablespoons turmeric (or 2 inch piece fresh and diced)
10 quarts of filtered water
Gluten free miso
Wakame or kelp
Add all ingredients to a stock pot and bring to a simmer.
Simmer for as long as possible, at least 2 hours.
Remove from heat and strain broth.
Pour a bowl of warm (but not boiling) broth. Add 1 to 2 tablespoons of miso and stir until dissolved. Add a pinch of seaweed and let it hydrate and expand, then enjoy!
